Built in 2000, in a strict neocolonial Spanish style, respecting the architecture of the area with indigenous materials (adobe walls and hollow reeds on the roofs).

The restaurant of El Manantial del Silencio is directed by Chef Sergio Latorre. Latorre is a specialist in Andean cuisine and is known for finding the perfect balance between input and preparation.
The region is a natural supplier of produce of extraordinary quality. There are the famous Andean papines and corn, llama meat, trout from the Yala mountains, quinoa and amaranth, goat cheeses, charqui and a myriad of remarkable foods wisely combined by the chef.
